Fifty-four floors above the Financial District, Canoe has spent decades as the address Torontonians choose when the evening has to matter. Floor-to-ceiling windows run the length of the room, framing Lake Ontario and the downtown skyline far below, and the cooking answers that view with a confident, unmistakably Canadian point of view.
A Canadian point of view
Part of the Oliver & Bonacini group, Canoe reads the country as a pantry — game, grain, coastline and orchard — and executive chef Ron McKinlay builds the menu around whatever the season and the farmers are sending. It is refined without being fussy, rooted in place rather than in imported fashion.
Cuisine
Choose the a la carte or surrender to the multi-course tasting menu. Expect nose-to-tail Tamarack Farms lamb, wild Pacific halibut with Savoy cabbage and champagne cream, crispy pork jowl with Ontario rhubarb and baby beetroot, and game such as venison alongside foie gras. Save room for the caramelized honey cake and the house Canoe brioche with whipped brown butter.
The Space
A recent redesign, built on Yabu Pushelberg’s original bones and refreshed by Solid Design Creative, leans into the landscape: a sculptural ceiling of mirrors and angled lenses overhead, chandeliers bundled like kindling, woven-felt nods to the canoe and the snowshoe, and warm copper against the wall of glass. An open kitchen and Chef’s Rail let a few guests watch the pass up close.
