The concept
Earls is the Canadian group that helped invent premium-casual dining — founded in Edmonton in 1982, now 70-plus locations, still family-owned. The draw here is the bar as much as the plates: seasonally driven, globally inspired food, a cocktail list built in a dedicated Vancouver test kitchen, and a room engineered for after-work energy.
What to order
Graze from the spinach three-cheese dip, crispy calamari and fresh oysters, then go big with the Wagyu Oshi Press, a chargrilled Filet Mignon, the Bigger Better Burger or the Steak Tortellini.
