The concept
Miku is the Toronto home of ABURI Restaurants, the Vancouver group that introduced Aburi cuisine to North America. Aburi means the sushi is flame-seared over binchotan oak charcoal and finished with a house-made sauce — a technique that lends each piece a smoky aroma and a melt-in-the-mouth texture. Miku opened on the harbourfront in 2015 as the city’s first dedicated Aburi house.
What to order
The Aburi Salmon Oshi — pressed BC wild sockeye, seared and topped with jalapeño and Miku’s signature sauce — is the dish that made the name. The Space
